I m very happy as I write this guest post for my dear friend  Haffa who is such a sweet heart .Haffa is a dear friend and very talented blogger and has lot of mouthwatering recipes in her lovely blog  Haffa’s Kitchen Adventure .

I chose a simple and easy recipe for my sweet friend an eggless chocolate mousse which is made from homemade mascarpone cheese which i posted some while ago.

Turtle Bread/ Custard Filled Turtle Buns

Baking your own bread can be highly addictive .Yes once you get hooked in baking breads there's no looking back. You'll be wanting to try more and more and its really fun specially  shaping in cute little characters . .More than plain buns I love stuffed buns/rolls be it with sweet or savoury filling.I have already posted few buns & rolls before and here's one more to add to the list.My dearest friend Suhaina keeps inspiring me with delicious bakes and always keeps motivating me.
These cute looking turtle not only look cute but are so soft and delish that you will want to bake more .I have filled this buns with Chocolate Custard Cream which I made a day ahead and refrigerated.These taste best when eaten warm but they    are delish and soft when eaten the next day too.


 Ingredients
for the Chocolate Custard cream
2 egg yolks
1 cup milk
2 tbsp cornflour
1tbsp flour
5 tbsp sugar
1 tsp vanilla essence
2 tbsp butter
1 tbsp cocoa powder


Method:
  • Warm the milk
  • Beat the egg yolks with sugar .
  • Mix the flour , coco powder,cornflour and whisk
  • Add the butter and essence.
  • Gently pour the warm milk and mix.
  • Place the saucepan on the gas and cook on med flame stirring it continuously ,it will begin to thicken
  • Switch off the flame and continue to whisk
  • Cool at room temperature then cover with cling foil and refrigerate for later use.
for the buns
2 cups flour
1/4 cup milk
1/2 cup water
1.5 tsp yeast
1tbsp sugar
1 tbsp milk powder
1/2 tsp salt
1 tbsp butter
2 tbsp oil.

Method;
  • Dissolve yeast in lukewarm water along with 1 tbsp sugar let it sit for a while till its frothy.
  • Mix the flour,salt,milk powder together in a bowl ,to this add the yeast .
  • Start kneading to a soft dough adding milk,melted butter.
  • Once it turns to a soft sticky mass slowly add in the oil .
  • Knead well for 8-10 min till you get a smooth soft dough.
  • Cover the bowl with cling wrap and set aside for 1 hr or   till it doubles the size.
  • Once it has doubled punch down and knead for 4-5 min.
  • Divide into balls .
  • Roll it round .
  • Place the custard filling in the centre.
  • Cover it and pinch to seal its edges and pinch the seem side down
  • Roll one dough into a clyinder
  • Cut into pieces to shape it into head,tail ,hands and legs.
  • Place 2 pepercorns/raisins to form turtle's eyes.


  • Proof it further for 30 min covering it with damp cloth.
  • Pre heat oven at 180 degree C for 10 min
  • Apply  egg wash or milk on the buns and bake for 20 min at 180 degree.
  • You can enjoy them warm .
  • Or if piping chocolate on the turtle body allow
  •  the buns to cool completely .
  • Then pipe out melted chocolate over the buns.
  • These buns are best eaten when warm but they do taste great when cool
  • Slightly warm it in the microwave for few sec before serving if you want them warm.




Green Masala Chicken Biryani

 There are umpteen numbers of biryani from which i love  Mutton ,Prawn,Veg& this Chicken Biryani .This green masala Chicken Biryani is full of flavors.The taste is just wonderful .I'm a big fan of green masala i have many dishes in this blog with green masala The reason being  i love the flavors from the freshly ground masalas.

Ingredients:
for the chicken masala
1/2 kg Chicken
1 tbsp ginger garlic paste
1tsp lime juice
1/2 cup curds
1/2 tsp turmeric powder
1 tsp garam masala powder
1/4 tsp mace powder
1/4 tsp nutmeg powder
2 med tomatoes
4 onions sliced
2 potatoes cubed & deep fried
salt
to grind to paste
2 cups fresh coriander leaves
1 cup mint leaves
6-7 green chillies/as needed
1 tsp shahi jeera
1/2 tsp cumin seeds

 For the Rice
2 cups basmati rice
2 bay leaves
2 black cardmom
3 green cardmon
1 inch cinnamon stick

2 tbsp ghee
1/2 cup oil
saffron infused in warm milk
dry fruits as needed.

Method:

  • Marinate the chicken pieces with curds,salt,ginger garlic paste and turmeric powder.
  • Grind the green masala to fine smooth paste.
  • Add the ground paste to the marinated chicken  and set aside for 1.5 to 2 hrs in the fridge.
  • Fry 2 sliced onions till golden brown and crsip.
  • Fry the potatoes and the nuts ,set aside.
  • In a vessel heat oil add chopped tomatoes and fry till mushy.
  • Then add the remaning sliced  onions and saute till soft and transparent.
  • Add the marinated chicken ,saute for 7-8 mins.
  • Add water and let it cook till the chicken is done.
  • Soak basmati rice in water for about an hour then drain water .
  • In a vessel add enough water to cook the rice .
  • Put all the spices under rice add little salt and cook the rice till 3/4th done.
  • Drain the excess water and keep the rice ready.
 Assembling the biryani
  • In a thick bottomed vessel add melted ghee then spread the layer of rice .
  • Crush the fried onions,put the chicken gravy & the nuts & potatoes.
  • Sprinkle some mint & coriander leaves .
  • Pour 1tsp ghee.
  • Spread the remaining rice .
  • Lastly sprinkle the remaining fried onions ,nuts  and the saffron.
  • Pour the remaining ghee.
  • Cover with lid and keep it on stove top on very low flame for 15-20 min.
  • Serve hot with raita.

I met Subha in one of fb's group who then became a very close friend .I got attracted to the blog since its unique and filled with super yummy recipes which are all dairy free .So all those allergic to dairy products and you still want to have something yummy look up for Subha's Space you will never regret. Now over to Subha.


I got introduced to Gloria through blogging and within a short time, we became very close friends. I love her cake recipes. I am not an expert in baking and Gloria’s space is one of the most inspiring blogs for me. She has a great collection of recipes and I was so thrilled when she told me to do a guest post. It is a great pleasure to do this and I am so glad that I have found her on this blogosphere - someone who is very genuine and sincere, who I can rely on, share my feelings with no hesitation..

This recipe is adapted from Vah chef’s video but I have made several alterations to suit our diet (as I usually blog only dairy free recipes). I am sure you all would definitely love this Kebab. It has amazing texture – crispy outside and soft inside. You can impress your family members or guests with this Kebab. I am absolutely sure about that. Now, over to the recipe..


Ingredients:
Raw Bananas / Plantain
3 medium
Channa Dal
1/2 cup
Cashews
1/2 cup
Pomegranate seeds
3 tbsp
Finely chopped onion
1/2 cup
Chopped Coriander leaves
2 tbsp
Coriander powder
2 tbsp
Green chillies
1 or 2 small
Cumin seeds
1/2 tsp
Turmeric powder
1/4 tsp
Amchur Powder (Dry mango powder)
1/4 tsp
Chopped ginger
1 tsp
Chopped garlic
1 tsp
Chat Masala
to sprinkle on top
Red chilli powder (optional)
as needed
Salt
as needed
Oil
as needed

Method:
1.       Boil the raw bananas with enough water. Please make sure it does not overcook as we do not need it mushy. Peel, mash and keep them aside after discarding their skin.
2.       Boil the channa dal till it is almost done. Here also, please make sure not to overcook. Drain the water.
3.       In a hot pan, add a little oil. When the oil becomes hot, add cumin seeds. Add chopped onions when the cumin seeds crackle.
4.       When the onions turn light brown, add chopped ginger, garlic and green chilli. Sauté till the raw smell goes. Add turmeric powder, chilli powder (optional), coriander powder, Amchur powder and salt. Add the channa dal and mashed raw banana (I put them in mixer for about 10 seconds as I was finding it hard to mash). Mix well. Check salt and switch off the flame. Allow to cool.
5.       In a mixer, make a fine powder of the cashews.
6.       Mix the cashew powder with pomegranate seeds, coriander leaves and a bit of salt. This is the stuffing which will go inside the Kebab.
7.       Divide them into small equal parts (I got around 10 small balls) and make them into tiny balls.
8.       Take the raw banana – channa dal mixture and make medium sized thin patties with your palm (I got 10 of them). Put the cashew stuffing, close and make them back to thick patties. Now you would have the patties with the cashew stuffing inside. Make 10 patties like these. Shallow fry them in oil and sprinkle chat masala on top.
9.       Serve with chutneys of your choice.


Chicken Fried rice with Meatballs

If you love fried rice you're going to love this for sure . filling one pot meal with fried meatballs, chicken and egg you can add crab meat and sausage too.Goes very well with Chicken Chilli Do give it a try ..I have used meatballs with mutton mince you can make it with chicken/beef mince too.


Ingredients;
300 gms chicken boneless
2 cups rice
1 egg
1 green chilli
5-6 garlic cloves minced
12-15meatballs click here for recipe
1 tsp oyster sauce
1.5 tsp chilli sauce
1 .5 tsp soy sauce
1 tbsp pepper crushed
2 med capsicum
1 carrot finely chopped
7-8 french beans chopped fine
1 cup spring onions chopped fine.
oil
salt

Method
  • Cook rice till 3/4th done and let it cool completely.
  • Boil the chicken with pepper and salt and shred to pieces.
  • In a pan heat 1 tsp oil add green chillies pepper and egg scramble it  and keep it aside.
  • In the same pan heat 2 tbsp oil ,add chopped garlic and saute for 2-3 min
  • Then add the french bean and carrot saute for sometime.
  • Add pepper and salt ,then add the shredded chicken ,meat balls and the sauces.
  • Mix in the cooked rice and give it a nice stir so that everything mixes up well.
  • Lastly add the chopped spring onion .
  • Toss it well ,add salt and pepper if required.
  • Serve hot with Chicken Chilli.

Orange Cake

Soft and delish this citrusy cake will fill your house with a lovely aroma.This orange cake is just too soft and moist .You'll fall in love with every bite.You can glaze this yummy cake or have it plain .I preferred to have it the way it is.Do try this .You'll be wanting to try this over and over again.

Ingredients:
1 cup flour
1/2 cup butter softened
3/4 cup powdered sugar 
1/2 cup orange juice
1.5 tsp orange zest
2 eggs
1.5 tsp baking powder

Method:
  • Prepare the baking tin by  greasing it and lining it with parchment .
  • Pre heat the oven for 10 min at 180 degree .
  • Sift the flour and baking powder.
  • Beat sugar and sugar till fluffy
  • To this add egg one at at time and beat till its mixed
  • Add the orange zest



  • Add flour and beat on low speed till the mixture is incorporated
  • Add the orange juice and mix well.
  • Pour in prepared tin and bake for 35-40 min at 180 degree Celsius or till tooth pick inserted come out clean.
  • Allow it to cool completely before slicing

Chocolate Cupcakes with Strawberry Whipped Cream Frosting

Inspired by my dear Suhaina I made these cute little cupcakes for my wedding anniversary .The best no fail recipe adapted  from here.These were the best chocolate cupcakes ever covered with strawberry whipped cream which went perfect with it..I also made one 6 inch chocolate cake and covered with strawberry whipped cream. Do try these yummy cupcakes you'll love them .

Ingredients:
for the cupcakes
  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup  Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup  oil
  • 1 tbsp vanilla extract
  • 1 cup boiling water


for the whipped cream frosting
1 cup whipped cream
1 tsp strawberry essence
2 tbsp icing sugar
 color
 Method:
. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.
 Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes
. Stir in boiling water (batter will be thin).
 Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 180 degree Celsius. Fill cups 2/3 full with batter. Bake 22 to 25 minutes.or until wooden pick inserted in centre comes out clean Cool completely. Frost.
Makes About 30 cupcakes.
Beat the whipped cream with icing sugar till soft stiff peaks then pipe it over the cupcakes.

Kul Kul .. Christmas Sweet

Kul kul are popular sweet made by East Indians and Goan Catholics during Christmas .They are delicious cookies which are fried ,they just melt in mouth .These stay well for month .There are two versions of kul kul one is this and the other is dipped in sugar syrup however this version has been my favourite since childhood.
I remember helping my aunts and mom to make this during Christmas .We all cousins use to sit till late night after dinner and together help to shape kul kuls.They are really very addictive.Do try this out.Kul kul combs are available easily at a very cheap cost  but if cant find this you could use a clean comb or a fork to shape it.


Ingredients:
150 gms flour/maida
100 gms fine rava/semolina/sugee
1 egg
1 tsp vanilla extract/essence
6 0 gm ghee
60 gm  powdered sugar
milk or water to knead
oil + ghee to deep fry



Method
Mix the ghee,powdered sugar egg,flour essence and knead to soft dough.
Cover the dough with cloth and let it rest for 2-3 hrs.this is done for the rava to swell up.
Divide the dough in three parts and add few drops of colour and knead well.
Make small balls and flatten the ball on the kulkul comb/fork.

Roll the dough to shape it as kul kul.
Press the ends slightly so that they seal and don't open while frying.

Heat ghee/oil or you may mix both in a kadhai .
Fry kul kul in small batches over slow fire.
Remove the kul kuls on kitchen towel to drain excess oil.
Let it cool completely before storing in air tight containers.

Date Roll.....Christmas Sweet

Marzipan Milk Cream and date rolls are my favourite sweet.These date rolls ar very delicious .Soft buttery rolls stuffed with dates and nuts make a wonderful sweet.These are actually eggless cookies except for the egg wash which can be avoided if you don't want to use eggs.


Ingredients
250  gms maida/all purpose flour
1/4 tsp baking powder
125 gm butter
1.5 tbsp powdered sugar
1/2 tsp vanilla extract
milk to knead
200 gms seedless dates
50 gms walnuts/cashews.
egg yolk + water for egg wash.



Method:
  • Mix together flour ,butter ,pinch of salt (avoid salt if using salted butter) sugar till it resembles crumbs.
  • Adding  little milk knead to soft dough.
  • Roll it like chapati and cut into strips approx 1 1/2 ''.
  • Place the seedless dates and walnut/cashew and roll to cover the edges
  • Apply little water to seal the edge .
  • Apply the egg wash for glaze.
  • Place the rolls on baking tray lined with parchment paper.
  • Pre heat the oven for 10 min at 180 degree Celsius.
  • Bake for 15 mins.
  • Cool completely before storing in airtight containers.

Homemade Pizza /Pasta Sauce

This is my quick and easy homemade pizza/pasta sauce .I use this for pizzas,pastas ,calzone etc..There are many pizza,pasta and calzones recipes coming up very soon on the blog so thought of posting this basic sauce today.

 All you need is
  • 5-6 tomatoes
  • 8-9 garlic cloves minced
  • 1/2 tsp mixed herbs
  • 1 tsp oregano
  • 1 tsp red chilli powder/chilli flakes
  • 1.5 tsp sugar
  • salt
  • 1 tbsp tomato ketchup.
  • 1/2 tsp olive oil optional

Method;
  • In a pan of boiling water add the tomatoes cover with lid
  • put the tomatoes in cold water .
  • Remove the skin and blend it.
  • In the vessel pour the blended tomato, and add the ketchup and red chilli powder
  • Cook over medium flame .
  • Add the herbs and salt and sugar .
  • Add about 1/2 cup water and cook for 5-7 min till the sauce thickens.
  • Use it for pizza/pasta ..you can store the remaining in the fridge .

Chicken Calzone

Calzone also called as folded pizza is a yummy snack perfect to serve for parties or as kids lunch box the filling can be of your choice I have used chicken and capscicum filling and my homemade homemade pizza sauce .You'll love this cheesy yummy calzone and your kids will be asking for more.
Ingredients:
for the bread
2 cups flour
1 tbsp milkpowder
1 tbsp sugar
3/4 cup water
1.5 tsp yeast
1/2 tsp salt
1 tbsp butter
2 tbsp oil.

1/2 cup pizza sauce
1.5 tsp oregano
1 cup grated cheese
melted butter for brushing

Method:

Dahi Chana / Khate Chane

A very tasty yet simple dish  without onions ,ginger garlic and tomatoes It goes well with chapati/roti or rice I enjoyed it with methi theplas.
The gravy can be kept semi dry too..This dish uses very little oil so its a healthy and yummy dish too.

Ingredients
  • 2 cup black chana boiled
  • 1 cup curds
  • 1.5 tsp besan
  • 1/2 tsp jeera/cumin
  • 1/2 tsp mustard seeds
  • 1 tsp red chilli powder
  • 1.5 tsp coriander cumin powder
  • 1/4 tsp hing/asafoetida
  • 1 tsp
  • 1.5 tsp oil
  • curry leaves a sprig
  • 1 tbsp chopped coriander leaves
  • salt to taste.
Method
  • Pressure cook the soaked chana with salt,red chilli .
  • Whisk the curds well with water salt and besan.
  • In a vessel but the whisked curds and the boiled chana
  • Mix the masala powders and the sugar.
  • Let this come to nice boil.
  • In a small vessel heat oil and add the hing,curry leaves and the cumin ,mustard seeds.
  • Once it splutters add this tadka to the chana mixture.
  • Let it boil for a min.
  • Garnish with coriander leaves .
  • Enjoy hot with roti/.rice
 

Chicken Vindaloo/East Indian style Vindaloo/Indyal recipe.

Vindaloo or Indad/ Indyal as we popularly call it is a hot favourite is in every East Indian Catholics and Goan Catholics household.Though our recipes differ completely from the goans. .No feast or wedding s complete without vindaloo for us East Indian fugiyas /fugyas and Vindaloo is like a match made in heaven .We love just love this..Now due to health reasons people have started avoiding red meat so we make this with chicken or fish and believe me its equally mouthwatering...

The deep red colour is from the kashmiri red chillies which is ground with vinegar and other spices.The more you keep it the better it tastes.Do give this  a try and you'll keep licking your fingers I bet..
Ingredients:
  • 1/2 kg Chicken pieces
  • 12-15 Dry Kashmiri chillies
  • 1inch  ginger
  • 15-18 garlic cloves (med sized)
  • 1.5 tbsp heaped cumin seeds
  • 1/4 cup vinegar + 2 tbsp more
  • 3 tbsp oil
  • salt to taste

Method:
  • Wash the  chicken well and drain excess water.
  • Apply salt and set aside for 1/2 hr.
  • Soak the kashmiri red chillies in hot water for 15 min.
  • Grind the chillies with cumin,garlic ginger and vinegar to a very smooth fine paste.
  • Heat oil in the vessel add the chicken and saute for 5 min.
  • Then add the ground masala and mix well.
  • Add about 1 -2 cups of water and allow it to come to nice boil.
  • Lower the flame and continue to cook for some more mins.
  • Add more vinegar and salt if needed
  • You can adjust the water depending on the consistency of the gravy you require.
  • Enjoy it with foogyas/rice/bread.


Note
The amount of vinegar added depends on the quality and sourness of the vinegar.
Do not compromise on oil and vinegar sice this is what enhances the flavor and keeps it for many days.
We usually do not fry the meat(red meat)in the oil first before adding the masala.
If making with red meat just rub some  salt on the meat and the mix in  masala ,oil well and place it on the gas to cook on med flame.
 

Prawn Biryani

One of my favourite biryani..Very simple and easy to make ..If you are a sea food lover you will feast on it..I just love this..Made this with some crispy Bombay ducks along..didint need any salad/raita..it was just so good by itself.Here's the way i make this..do try it out.
 ingredients
10-15 prawns
1.5 tsp ginger garlic paste
4 tbsp curds beaten
1.5 tsp red chilli powder
1 tsp pepper powder
1 tsp garam masala powder
1 tsp cumin powder
1/2 tsp fennel powder
1 mace/javtri
3-4 cloves
1 inch cinnamon
1big tomato chopped
3 onions sliced
2-3 green chillies slitted
1 bay leaf
coriander leaves
mint leaves/pudina
10-12 cashews
10 raisins
1 cup basmati rice
2 tbbsp oil
1 tbsp ghee
few strands of saffron
2 tbsp milk
salt

Method:

  • De vein the prawns and remove the shell.
  • Wash the prawns and remove excess water
  • Marinate the prawns with salt ,ginger garlic paste ,curds ,pepper powder and red chilli powder.
  • Fry the sliced onions till golden brown and crisp and set aside.
  • Meanwhile prepare the rice ..Cook the rice till 3/4 th done with bay leaf,cloves,pepper and cinnamon 
  • For the masala heat oil in the pan ,add 1 onion sliced and fry till soft and translucent.
  • Add chopped tomatoes and fry for 3-4 min.
  • Add the marinated prawns,cumin powder,green chillies and the marinade and saute for3-4 min.
  • Mix in about 1 cup water and let it come to a boil.
  • Lastly add the fennel powder and garam masala powder.
  • Soak the saffron in warm milk.
  • Fry the nuts and keep it ready.
  • Assemble the biryani by arranging the rice then the prawns masala ,fried onions,chopped coriander and mint leaves.
  • Then the rice and finally the remaining crispy fried onions and the nuts.
  • Make 4 holes with back of the spoon and add 1 tbsp ghee on top of the rice.
  • If using saffron and milk put it over the final rice layer.
  • Cover with lid and cook on high flame for 5 min then lower the heat and cook on low heat for 15 min.
  • Serve hot with any salad/raita..I enjoyed mine with crispy fried Bombay ducks.

Wedding Cake ..Happy Valentine's day....

A very happy valentine's day to one and all...   I'm very happy as i write this post today as I'm sharing with you'll a lovely wedding cake i made for my dear cousin who got married last month..I tried making a wedding cake last year for new year but this was my was wedding order..And it was a huge hit My cousins ,friends and everyone who tasted it just loved it.This was the first time I made a traditional fruit cake and covered it marzipan and fondant.
Though I put in lot of efforts and took great care taking it to the venue It was worth every effort when the bride and the groom gave a thumps up and all appreciated the work that went in..What more did I want..Now I will be making 3 more wedding cakes this year and I'm very excited about it..

Sheer Khurma/Sheer Korma

A super delish sweet dish made from seviyan/vermicelli and milk and dates served mainly during Eid.I use to devour on this when i visited my Muslim friends during school days.I now keep making this atleast twice a month.
Ingredients:
seviyan/vermicelli 1/4 cup
1lt full cream milk
1/2 cup sugar
4-5 dates chopped
1 tbsp chironji/charoli
10-15 pistachios chopped
10-15 almonds blanched and chopped
10-15 cashews chopped
8-10 raisins
few strands of saffron
1/2 tsp cardamom powder
1 tbsp ghee
Method

  • Boil the milk and let it simmer on a low flame till it thickens a little.
  • In a pan heat 1 tsp ghee and fry the nuts and keep it aside.
  • In a vessel heat 1 tsp ghee and roast the vermicelli till light brown.
  • To this add the milk and sugar and keep stirring.
  • Add the nuts and saffron
  • Lastly add cardamom powder.
  • Serve hot/warm or enjoy cold the choice is yours..

Mutton Mince Dry /Bhuna Kheema.

This is a very tasty kheema/mince  filling which can be used for samosas /buns. I made some yummy stuffed kheema/mince buns and some mini samosas using this filling.There is very less oil used in this since we don't want oil to ooze out from the buns.
You can use soya kheema if you want to make it vegetarian.

Ingredients:
250 gms mutton kheema /mince
2 onions chopped finely
1/2 cup tomato puree
1.5 tsp ginger garlic paste.
1 .5 tsp pepper crushed
1 tsp red chilli powder
1 tsp coriander powder
 1tsp garam masala powder
1.5 tsp oil
salt
lime juice as needed
coriander leaves chopped.

Method:
  • Wash the mince and drain all the excess water.
  • In a non stick pan heat oil add the chopped onions and saute on med heat till they turn soft and transculent.
  • Add the ginger garlic paste,saute till raw smell goes off.
  • Miix the tomato puree and saute.
  • Add the chilli,coriander powder and saute.
  • Now add the mince and mix well till all the masala coats it.
  • Fry the mince on low flame for 7-8 min.
  • Add the salt,pepper powder and the garam masala powder.
  • Fry the mince well ,it has to be completely dry.
  • Lastly add lemon juice and chopped coriander leaves.

Notes:
Use very fine mince, double machined one
You can use any mince chicken ,beef or mutton.

Kheema Stuffed Buns/Mince Stuffed Buns.

These stuffed buns make a wonderful snack..Made these on tuesday as I had some guest over .They enjoyed it to the core..Actually I was thinking of stuffing it with some veg filling but then since It was last day of eating meat for all those observing lent I thought of stuffing it with spicy drymince  ...
Soft pillowy buns stuffed with delicious mince/kheema ...Goes well with cup of coffee/tea  or just have it the way you want its like having kheema pav in a go..Try them and you'll love it..

Ingredients:
Makes 8 buns/12 mini buns
For the Buns
2 cup flour
1/2 cup water
1/4 cup milk
1 tbsp milk powder
1.5 tsp instant  yeast
1 tbsp sugar
1/2 tsp salt
2 tbsp oil
1 tbsp melted butter

You could add one boiled and mashed potato to the mince mixture ,this will help it to bind well and make it easier to stuff.


Method:
  • Dissolve yeast with sugar in lukewarm water and let it rise.
  • In a  bowl mix flour ,salt ,milk powder.
  • Add the yeast mixture and knead .
  • Mix warm milk and melted butter to this and knead to  a soft dough.
  • When the dough comes together  add oil and knead for 4-5 min .
  • The dough should be soft and smooth.
  • Cover it with a cling foil and let it double in its volume.
  • It may take around 45 min -1 hr.
  • Once the dough has risen well Punch down the air and knead for 2-3 min.
  • Divide into balls .

  • Flatten each ball on your palm and place the mince stuffing.
  • Cover to form a ball and pinch the seam side down.
  • Cover with a damp cloth and let it proof for 30 min or till its double in volume.
  • Brush the top with egg wash/milk and sprinkle sesame seeds.

  • Bake in a preheated oven for 18-20 min at 180 degree .
  • Enjoy it hot or with a cup of tea /coffee
