Coconut Chutney /Coconut Coriander Chutney

Coconut chutney or coconut coriander chutney is a very delicious and flavourful chutney made using fresh coconut,coriander leaves and few ingredients easily available in your pantry .This coconut or green chutney is an awesome sandwich spread .You can make delicious sandwiches with this chutney .Simple butter and coconut chutney taste great .We love these delicious chutney sandwiches and enjoy them for tea /breakfast or evening snack .
Ingredients
1 cup fresh  coconut grated
3 green chillies
1 1/2  cup coriander leaves
3 to 4 sprig mint leaves
3 garlic cloves
1/2 inch ginger
1 tsp cumin seeds
1 marble sized  tamarind
1 tsp sugar
3 to 4 cashewnuts/ 7 to 8  peanuts
Salt

Method
Grind together all the ingredients adding just 1 to 2 tsp water .
Grind to a smooth paste
Use as sandwich spread.
Or enjoys accompaniment with pola ,idli dosa or wadas.
Make chutney sandwiches/chutney cheese sandwiches or some pretty ribbon or triangle sandwiches

 Kadle Manoli/Tendli Chana or Tindora Chana is a delicious Mangalorean style preparation mad with ivygourd /tendli /manoli and chana balck gram in roasted flavoufrul spices and coconut. Kadle Manoli or Tindora Chana is a very famous traditional dish feom the mangalorean cuisine made by all mostly the Bunt Commununity. The frreshly roasted and ground spices brings lovely flavour and taste .This KAdle manoli or tendli chana goes well with chapati /phulaks appam or can be eaten with rice along with dal or any curry preparation.

 tendli chana or Kadle manoli is a dry dish and is usually served with as a side dish goes very well with simple dal and rice or any fish curry rice meals too

 ingredients
200 gm tendli/ivy gourd
1 cup dried black chana/black chickpeas
1/2  cup coconut grated
4 to 5  dry red chillies I used Kashmiri
1 tbsp coriander seeds
1 tsp cumin seeds
6 to 7 pepper corns
1/4 tsp methi seeds/fenugreek seeds
4 to 5 garlic cloves
1 onion
1/2 tbsp jaggery
1/2 tsp mustard seeds
1/4 tsp haldi/turmeric powder
1 tbsp oil

Method

  • Soak the chana overnight or for 7 to 8 hours
  • Pressure cook the chana with salt and water and keep aside ,it takes about 16 to 17 minutes for the chana to cook.
  • Slit the ivygourd/tendli into 4 
  • Dry roast the spices till fragrant and aromatic
  • Grind to coarse powder.
  • Remove the powder and grind the coconut in the same jar coarsely
  • Slice One onion and crush the garlic and keep it ready.
  • Heat a pan,add oil once hot add curry leaves then add mustard seeds ,let them crackle.
  • Then add the crushed garlic and saute
  • Add in the sliced onion and saute til it turns soft.
  • Now add the turmeric powder and ivy gourd/tendli and saute for 2 to 3 min
  • Then add about 1/2 cup water and cover with the lid and let the Ivy gourd cook over med low flame.
  • Then add the powdered masala and saute
  • Add in the boiled chana and mix well add 1/2 cup water I used the water reserved from boiling chana.
  • Also add the jaggery 
  • Cook over medium flame 
  • Add salt 
  • Then add the coconut ,mix well cook on low flame for 4 to 5 minutes
  • Dish out ,serve with chapati,rice or appam/porotta

  Murmura Chivda/Sev Kurmura is a very addictive snack made from puffed rice..Light and delicious ,this Murmura Chivda /Mamra Chivda can be munched any time of the day .Murmura Chivda is light as very little oil is used .crispy and so yummy.This Murmura Chivda/Mamra Chivda is a very popular snack In Gujarat and Maharashtra.

 This Chivda is light on tummy too since there is no frying involved its kind of healthy snack that can be munched all day long .I have added makhana/fox nuts too you can add puri/papdi as well

 Ingredients
4 cups kurmura/mamra/murmura
1/4 cup peanuts
1/2 cup makahana/fox nuts
2 sprigs curry leaves
1 tsp mustard seeds
1/2 tsp turmeric powder
1/2 cup fine sev/barik sev/nylon sev
1/2 cup chana dal/dalia
1 tbsp oil
salt
vagharlela mumra,vagharlelo mamro,vagherlela murmura
Method
Ina  kadhai/thick bottomed pan/a huge nonstick pan add oil once hot add peanuts ,saute till they turn crunchy and keep aside .
Add the fox nuts and saute in the same oil adding little bit salt and turmeric powder
Keep this aside too .


Now add the curry leaves and the mustard seeds ,let them splutter .
Then add the turmeric powder ,saute on low flame
Add the Murmura/puffed rice/kurmura and mix well ,roast until crisp .
Once it turns crispy switch the flame off
Transfer it in a large plate/vessel add salt and mix well .


Then add nylon sev and fried chana dal or dalia ,give it a good mix .
Once cooled,
 store in air tight container and munch when you feel like .

Beef Roulade /Goan Beef Roulade /Beef Rolls in Green Masala

Beef Roulade in green masala is a delicious dish made with beef rolls/roulade ,Flattened beef steaks is stuffed with bacon/sausage,potato,carrot and capsicum then rolled fried and simmered in a mouthwatering flavoufrul green masala gravy.The Fried Roulade itself taste so delish and can be served as appetizer or side dish. Beef Roulade can be made in red green /rechado masala as well .My Mom makes it using green masala I am a die hard fan of green masala and prefer it in this style.

Ingredients
1/2 kg Beef Steak
125 gm bacon
1 carrot
1 small capsicum
2  potatoes

1 tsp cumin seeds
10 to 15 black pepper
4 green chillies
10 to 12 garlic
2 inch ginger
2 inch cinnamon stick
6 to 7 cloves.
1 tbsp vinegar

2 onions sliced
4 to 6 green chillies slitted
1/2 cup corinader leaves.

Method
Slice the beef steak into thin pieces
With a mallet/meat hammer  flatten each piece.
Wash and pat dry.
Apply salt lime and marinate for 1 hour.
Grind the spices and ginger garlic to  a smooth paste adding water and vinegar
Rub this paste to the beef pieces and marinate well for 30 minutes
Reserve  some paste ,take 1/2 cup corinader leaves.1/2 tsp cumin seeds ,2 to 3 green chillies ,and  1 med sized onion and grind to a paste .

Cut the capsicum carrot potato and bacon into strips.

Place bacon,capsicum carrot  and potato  julienne and roll it tightly secure with a thread or tooth pick.



Tie it with thread.



Marinate for 3 to 4 hours or overnight.
When ready to cook take oil in a pan and fry the rolls/roulade.

Keep aside in a plate.


Heat the pan add oil then add sliced onions  fry till translucent.
Add the masala paste and fry well till oil leaves sides.
Add 2 cups of  water and let it come to a nice boil
Add in the rolls and let the gravy coat the rolls
Simmer for 8 to 10 min,you may add more water depending on the consistency of gravy needed.
Check for salt add if needed,also add vinegar if required
Add fried potatoes and serve with Pulao  Pav or Rice.

 Portuguese influenced prawn turnovers or Rissóis  de Camăro are delish appetizer .Prawn rissois are Melt in mouth delicious turnovers/ half moon pies with creamy Prawn filling and a crispy outer covering. Rissois are always a hit at parties or gatherings .Rissois make a wonderful evening snack .Rissois can be made ahead and kept frozen for 2 to 3 months Just thaw and fry when you feel like. Rissois taste great when it's served warm with a cuppa or some cold drinks /juices you can serve them with ketchup, mayonnaise or tarter sauce as well.

Making rissois is actually easy though there are certain steps that needs some pre planning .The ingredients are all available easily in your pantry .You just need to follow few steps and you have a batch of delicious Rissois ready to fry anytime you crave for it .

Ingredients
For the filling
1/2 cup  or around 16 medium sized prawns deveined.
Salt
1 onion finely chopped
2 to 3 garlic cloves minced
1 tbsp Oil
1 tbsp butter
1 tbsp all purpose flour/maida
1/2 cup milk
1/4 tsp nutmeg powder
1.tsp pepper powder
2 cheese cubes or slices .

For the outer covering /dough
1 cup all purpose flour/maida
1/2 cup milk 1/2 cup water *
1 tbsp butter
Salt

For coating
1 egg beaten
Breadcrumbs as needed
Oil to deep fry.

Method
Chop the prawns fine or grind it coarsely in a food processor or mixer.
Apply salt and 1/tsp lime juice and keep aside.
Heat a pan /vessel /cooking pot ,add oil once the pan is hot.
Saute the onions and garlic for few minutes till the onions turn soft and translucent.
Add prawns and mix well,fry for 4 to 5 min.
Keep aside.

In the same pan  add butter followed by flour and saute for 2 to 3 minutes.
Add the milk and mix until smooth be careful as we don't want lumps to be formed.
Add pepper powder and the nutmeg powder mix well.
Now add the prawns mixture and mix well .
Then add grates cheese and mix .
Cook for 2 minutes then remove in a plate .



Meanwhile prepare the dough.
Heat milk and water in a  pan**
Add butter and salt and let the mixture come to a nice boil.
Add sifted flour and mix well.
Cook over low flame until it forms a ball.
Remove it in a plate.
While it's still warm knead it gently to a smooth soft dough.
Divide the dough into 3 to 4 balls .


Roll it in a round disc, using cutter or glass cut into smaller rounds discs.

Making the rissois
Place a tsp of mixture in each round disc.
Apply little water to seal the edges.
Cover it to form a half moon /semi circle and pinch the edges to seal.


Repeat with the same to make remaining rissois.
Dip the rissois in beaten egg and coat it with breadcrumbs.
Refrigerate or freeze for an hour before frying.
You can freeze the crumb coated rissois in the freezer and fry when needed.
Heat oil to deep fry.
Fry the rissois over medium flame in batches until golden brown.
Serve with ketchup or any dip.

Notes
I prefer to coarsely grind the prawns you can however use chopped prawns.
Adding lime is optional.
For the dough you can use milk alone or use water alone .
go easy on salt as cheese too is salty.
Refrigerate for an hour atleast before frying if freezing you could thaw it or directly deep fry.







Rissóis de Galinha /Chicken Rissóis

Rissòis /Rissoles  my personal favourite  snack/appetizer Being an ardent fan of chicken I tend to make Chicken Rissòis more often .Creamy melt in mouth chicken rissois makes an awesome starter /appetizer . Add prawns or chicken rissóis to your party menu I bet it will be a huge hit . Since its crispy outside and creamy melt in mouth inside its popular with kids Too I usualy serve this with mayonnaise  but can be served with tomato ketchup as well.

Ingredients
150 gm chicken breast boneless you can use thigh and breast too.
2 green chillies finely chopped
1 tsp pepper powder
1 tsp flour/maida
1 tbsp butter
1/2 cup maida /flour.
1 onion finely chopped
3.garlic cloves minced.
1/4  tsp garam masala powder
2 cheese cubes blocks or slices
For the dough
1 cup flour /maida
1/2 cup milk
1/2 cup water
2 tbsp butter
1/tsp salt

Breadcrumbs to coat
1 egg beaten
Oil to deep fry .

Method 
Boil the chicken and shred to pieces.
Heat a pan add oil once oil is hot , add minced garlic and chopped onion
add green chillies and saute all for few minutes.
add the ground chicken /shredded boiled chicken and fry for few minutes .
Add 1/4 tsp garam masala powder and 1 tsp pepper powder and mix well.
Remove in a plate .
In the same pan add butter once melted add flour and mix till light brown
Add milk and mix to form a smooth white sauce.
Now.mix in the chicken mixture add more pepper powder if needed.
Add grated cheese.
Allow it to cool before filling .


for the dough 
Heat water and milk
Add butter and salt
Now add flour and mix till it forms a ball
Remove in a plate and whole it's still warm knead it and divide into 3 to 4 balls
Knead the balls gently and roll and cut into disc using a glass or any cover or cutter.

Filling and frying the rissois
Fill 1 tsp filling in each disc .
Apply little water at the edge to seal
Fold it to form a semi circle and pinch the edges to seal.
Dip in beaten egg and roll in breadcrumbs.
Freeze or refrigerate before frying.
Heat oil to deep fry .
Fry over medium flame until golden brown.
Remove on an absorbent paper.
Serve hot with ketchup or any dip .

Notes
I have coarsely minced the chicken and then fried  and later ground the cooked mixture once cool to get smooth paste .
You can use chicken mince or boiled shredded chicken too.
The dough can be made using water or milk alone.
Adding garam masala and chillies is optional .

Baath/Batica /Bolo de Rulao is a Traditional Goan Semolina and Coconut Cake . Baath/Batk is traditionally made on Christmas and festive occasions but can be enjoyed all year around . Baath /Batika taste really amazing .You can enjoy it with a cup of tea or as a dessert .

The quantity of ingredients used may differ in every households but the basic recipe remains the same .Traditionally Baath is made with Freshly grated coconut but you can use dessicated as well .Some use aromatic spices like caraway seeds and nutmeg powder to enhance the taste of Baath/Batika.This is a no fail recipe for most delicious Baath i have tasted and belongs to my dearest aunt Lauren 💓💖💖she always made it for Christmas /Rosaries  and sent it across .We always waited for her Baath in the month of May when we used to gather around the Cross for Rosary . Ah,those were the days !

Ingredients
175 gm semolina/sooji/rava
175 gm freshly grated coconut
210 gm powdered sugar 
150 gm butter 
3 eggs
2 to 3 tbsp rose water
1 tsp vanilla essence
1/2 tsp baking powder
1/4 tsp nutmeg powder.

3 tbsp flour
1 tsp oil

Method:
Grind the freshly grated coconut with rose water to a fine paste .
Sieve Semolina/rava and keep aside .
In a bowl take powdered sugar and softened butter and beat till creamy and  fluffy .
To this add 1 egg and beat till combined.


Beat the other eggs too ,adding one  egg at a time.
Add the grated coconut and semolina/rava and mix well .
Cover the bowl with a  lid or ccling foil and Keep it in the refrigerator for 7 to 8 hours/overnight .
Next morning remove it out  at least an hour before you plan to bake.


Make a soft dough mixing flour oil and water .roll it into a round disc and cut into strips . 
Preheat the oven at 16- degree  Celsius for 10 to 15 minutes
Grease a 8 x 8 square /round cake pan and line it with parchment /baking /butter paper .
Add baking powder,nutmeg powder  and vanilla essence to the cake batter and mix well.
If needed add 1 to 2 tbsp milk and mix .
Pour the batter in the greased pan and place the dough strips to make lattice design.



Bake at 160 degree Celsius for 45 to 55 minutes or until the skewer/toothpick inserted comes out clean.
Allow it to cool before  un moulding .
Cut into slices and enjoy.

Notes
You can use dessicated as well ,you may need more water to grind it .
I have used fine rava/semolina.
If using unsalted butter add 1/2 tsp salt to the batter

Chocolate Dipped Almond Biscotti

Biscotti are Italian almond biscuits/cookies  that originated in the Tuscan City. Biscotti are oblong shaped twice baked cookies.  Chocolate Dipped Almond Biscottis are crunchy delicious  biscotti's dipped in melted chocolate. Biscotti's are all time favourite evening snack.Make a huge batch of these crunchy beauties and store them in air tight container and you have delicious goodies to munch on as your evening snack or anytime you crave to have something delicious.

Biscotti's are super addictve and easy to make If you haven't tasted biscotti yet you need to bake some ASAP you sure are gonna turn into a biscotti lover once you bake them ,I bet !

ingredients
1 1/2 cup flour
1tsp baking powder
1 cup sugar
1 egg
85 gram butter
1 egg white mixed with 1 tsp milk

1  cup chocolate
almonds 100 gm

Method 
Slightly toast the almonds,chop coarsely /slice and keep aside.
Mix flour salt,baking powder together and sift it.
In a bowl beat butter and sugar till creamy
Add egg and vanilla essence and beat till all mixed well
Add flour and chopped almonds
The dough will be sticky .


Remove the dough on a  floured surface/parchment lined tray and shape into log about 14 to 15 inch long and 3 to 5 inch wide .
Brush egg white and sprinkle some chopped almonds
Bake for 25 to 30 minutes at 180 degree C/356 Fahrenheit
Lower the oven to 150 degree Celsius
Allow the log to cool for 15 to 20 minutes.


With a serrated knife cut the biscotti into 1/2 inch thick slabs
Place it on the baking tray lined with parchment and bake for 12 to 15 minutes until golden and crisp
Allow the biscotti to cool completely before dipping it in the melted chocolate.
Melt 1 cup chocolate over double boiler
Dip one side of the biscotti and sprinkle some almonds.
allow the chocolate to set  and dry for about 30 minutes ,store in airtight container

Nankhatai Recipe /Nankatai Recipe

Nankhatai are melt in mouth delicious Indian Shortbread cookies  made with ghee/clarified butter flour and sugar .Nankhatai/Nankatai are melt in mouth delicious cookies famous in India and Pakistan.
I have shared 2 versions of Nankhatai/Nankatai in the blog earlier one which we make during Christmas and the other one which is made with besan or gram flour ..Today I will share another super hit version of nankhatai that we have been baking since years. It's a simple recipe which uses no rising agent like baking powder or baking soda. The result is decadent, melt in mouth  crumbly , khasta  delicious nankhatai which you will surely love.
The main ingredient here is pure /desighee Do not use butter or dalda to make this..if possible use homemade ghee and I guarantee ,you will baking this regularly ,it is simply the best .

Ingredients
1 cup maida/all purpose flour
1/2 cup semolina/sooji/rava
3  tbsp  besan/gram flour
3/4 to 1 cup ghee
3/4 cup sugar powdered
4 to 5 cardamom powdered
8 to 10 pista /almonds crushed/sliced
1/4 tsp salt

Method
Mix maida.apf,sooji and gram flour together
Add cardamom powder and 1/4 tsp salt and mix.
Add little ghee at a time  and mix till it resembles breadcrumbs.
Mix till it comes together ,do not knead you could add more ghee .
Wrap this dough in  cling foil and keep in the fridge for 30 minutes.


Divide into small balls and with a finger/thumb  make depression and add pista or almond flakes


You can make a slit using a knife too
Place the nankhatai 2 inch apart  on a baking tray lined with parchment.
Pre heat oven at 170 degree Celsius for 10 minutes
Bake for 15 to 20 minutes at 170 degree Celsius.
Allow it to cool over wire rack.
Store in airtight container.

Notes
the sweetness is just perfect for us,you may add upto 1 cup powdered suagr if you prefer more sweet.
Start adding little ghee you may end entire 1 cup or 3/4 cup depending upon the flour quality
Make sure you do not add water or milk ,add ghee if you need to make a soft dough

Almond flour cake
Almond Cake is super soft delicious tea time cake with an amazing texture. Almond cake is made with basic pantry ingredients and of course the important ingredients almond flour which adds  a lovely texture and flavour to this simple tea time cake .
This Almond cake is garnished upside down with blanched almonds which makes it looks so pretty. Almond Cake taste really delicious. Almond Flour makes it moist fluffy and adds a lovely texture too. I have been baking with almond flour since years now there are  other bakes  in the blog too which uses almond flour.
 Almond Cake happens to be our family favourite .We love such delicious soft tea time cakes. As mentioned in my old posts My family is  a great fan of tea time cakes. The prefer it over frosted ones  All thanks to Mom she bakes the softest and the best tea cakes .
Almond cake recipe


Ingredients
125 gm butter(softened)
125 gm sugar (powdered)
75 gm flour/maida
50 gm almond flour
3 eggs
1 tsp baking powder
1 1/2 tsp vanilla essence.
Almonds to garnish
1 tbsp jam

Almond Butter Cake ,soft Almond cake

Method
Line a 6 inch pan with parchment.
Preheat oven at 180 degree Celsius for 10 min.
Sift together flour,baking powder also sift almond flour and keep aside .
In a bowl take butter and sugar and beat using a whisk until creamy and fluffy.
Add eggs one  at a time ,also add vanilla essence and beat well with a whisk.



Add almond flour and mix well with a whisk .
Fold in the sifted flour and mix well with a spatula/beat on lowest speed .


Pour the batter in the greased baking pan,level with spatula.
Bake for 40 to 45 min at 180 degree Celsius.
Allow it to cool then invert on a wire rack.


Heat jam in a pan adding 1 tsp water mix with a whisk
Once its warm apply the jam with a brush
Let the cake cool ,slice and enjoy

I was lucky enough to find some crabs in this lockdown time without giving a second thought I immediately brought them and made this mouthwatering Crab Xec Xec/Crab  curry and ate to my heart's content. You can enjoy this delicious Crab Xec Xec with rice or any flat bread goes best with steamed rice or any flatbread.

Ingredient
6 to 7  mudcrabs
1 cup grated coconut
5 to 6  red Kashmiri chillies
7 to 8 peppercorns
1  inch cinnamon
5 to 6 cloves
4 to.5 garlic cloves
1/2 inch ginger
2 tsp tamarind pulp
2 med onions sliced
2 tbspOil.

Method
Clean the crabs  apply some salt and set aside.
Roast the coconut with coriander cumin seeds ,cinnamon ,cloves and peppercorn till the coconut turns brown and fragrant.
Roast the chillies onions and ginger garlis as well
Allow it to cool
adding water grind it to a paste
Heat the cooking pot/vessel thick bottomed pan add oil
Add the ground paste and fry well for few minutes over medium flame


Add the crabs and let it come to a rolling boil.
Cover with the lid and let it simmer for 10 to 12 min.
add the tamarind pulp and also check for salt add if needed
Serve it hot with steamed rice/bread/any flat bread.

Eggless Almond Loaf /Eggless Almond Loaf Cake

Today I am sharing an Eggless Almond Cake/Loaf  which is soft and delicious ,eggfree too.After posting the Almond Cake ,I received many comments and messages on how to make it eggless So here is eggless and easy Almond Loaf Cake .The recipe is simple and uses pantry ingredients that are easily found .

Ingredients
125 gm butter
100 gram flour/maida
1 tbsp milk powder
50 gm Almond flour
1/4 cup buttermilk ( 1/4 cup milk +1 tsp vinegar )
1/2 cup condensed milk
1 /4 tsp almond essence or 1tsp vanilla
3/4 tsp baking powder 1/4 tsp baking soda

Method
Sift flour,baking powder ,baking soda and milkpowder together and keep aside.
In a bowl beat butter and condensed milk till creamy
Add buttermilk,essence  and beat well
Fold in almond flour and mix.


Then add sifted flour  and mix
Pour in greased loaf pan
Garnish the top with some almond flakes


Bake at 180 degree Celsuis  for 40 to 45 min or until skewer/toothpick inserted comes clean .
Allow to cool ,slice and enjoy.

Green Masala Mutton Curry, Jeera rice ,Chicken Roast was my Sunday's lunch. If you are a regular reader  follower of my blog you must have come across many green masala curry /pulao recipes.I simply love the aromatic freshly ground green masala which adds so much flavour and taste to the curries.This green masala mutton is a simple yet delectable preparation .You can serve it with rice/pulao,jeera rice paratha pavm pola or bhakri goes well with everything.

Green Masala Mutton is very simple and easy recipe which uses freshly ground green  masala roasted onion and coconut and few aromatic spices .The curry can be made in an open pot or pressure cooker I have used pressure cooker as I was in a hurry .

Ingredients
1/2 kg Mutton/goat meat
1 cup dessicated Coconut
2 onions
1medium  tomato
1 1/2 cup coriander leaves
1/2 cup mint leaves
 6 to 8 green chillies
1 tsp peppercorns
1 tsp jeera/cumin seeds
7 to 8 garlic cloves
1 1/2 inch ginger
 1/2 tsp turmeric powder
1/2 tsp poppyseeds
1 maggi cube/stock cube
salt
oil
2 bay leaves
1/2 tsp garam masala powder

Method
Cut the mutton pieces ,wash and drain excess water
Apply salt lime and turmeric powder and keep aside for 2o to 30 minutes.
Mean while prepare the masala
Fry the sliced onions till brown and keep aside.
Roast the coconut till brown and keep aside
also dry roast the poppy seeds cumin and sesame seeds .
Grind onion coconut,poppy seeds sesame seeds together to a smooth paste.
Grind chilli, onion ,ginger garlic coriander mint leaves to a smooth paste.
Heat the pressure cooker ,add oil then add bay leaves .
Add chopped tomatoes and saute until mushy
Add the mutton and saute for few minutes.
Then add the ground green masala paste and saute for few minutes
Add the coconut onion paste and mix well.
Saute on medium flame for 5 to 6 minutes.
Add  potatoes ,stock/maggi cube  garam masala powder and water.
Close the pressure cooker lid and cook until done it may take around 12 to 15 minutes or 3 to 4 whistles.
Release the pressure ,open the lid
add  garam masala powder and seasonings ,if required.
Serve with rice/paratha/roti bread

Mince Hot Dog Recipe

Mince Hot Dogs taste absolutely delicious rolls/ hot dogs stuffed with  spicy ,sour slightly sweet mince . Making Mince Hot dogs at home is very easy .Once you have the mince filling ready you can make delicious hot dogs If the hot dogs roll are not available you can use the filling to make sandwiches or use ladi pav/dinner rolls as well .

Mince HotDog,chicken  Pattice and meatloaf sandwich was our regular Sunday breakfast after Sunday mass..We used to enjoy those delicious hot chicken Pattice from a nearby bakery and mom always made Meatloaf and mince for hot dogs for weekends  .Back then Mince hot dogs rolled in butter paper were popular party/picnic  snack .

Ingredients
for the filling
300 grams Mince(you can use beef/mutton/chicken)
2 big or 3 med sized onions finely chopped
2 to 3 tbsp oil
salt to taste

for the masala paste
8 to 10 kashmiri chillies
1 inch ginger
1 tbsp cumin seeds/jeera
8 to 10  garlic
4 to 5 cloves
1 inch cinnamon
8 to 10 peppercorns
1/4 cup vinegar or  as required
1 tsp sugar



Method
Wash the mince and drain excess water
Apply salt and set aside.
Soak the dried  kashmiri chillies in warm water for 15 to 20 min.
Grind chillies,garlic,ginger cinnamon,cloves and pepper together adding vinegar to a smooth fine paste.
Heat a pan,add oil once hot add finely chopped onions and saute well till translucent and raw smell goes away.


Add the ground paste and saute for 10 to 15 min on low flame till raw smell goes away and the oil leaves sides .
Add the Mince and saute for another 8 to 10 min until all mixes well.
Add around 1/1/2 to 2 cup water and let it cook well over med flame
Add sugar ,check for salt add if required
the mince should be semi dry yet without  gravy/water.
Allow to cool completely  then stuff in hot dog buns and enjoy.

Colourful and delicious Battenburg/Battenberg cake is sandwiched with jam and covered with Marzipan.This soft and delicious almond tea time cake is also called Battenberg Sqaure

Battenberg or checkerboard cake is a classic Tea time cake which is so pretty and delicious too .We often bake this  on Easter alongwith Simnel Cake But recently made it for my Mom's Birthday .Thought of sharing it on my blog's 7th anniversary which fell on the 9th this month but somehow it got delayed.

150 gm all purpose flour/maida
180 gm butter 
180 gm powdered sugar
70 gm almond flour  
3 eggs
1 1/2  tsp vanilla essence
pink and yellow food colour/gel colour

Method
Grease a 8 inch square baking tin and line it with parchment ,use a thick cardboard covered with aluminium foil to divide the baking tin into two equal halves.
Sift flour,baking powder together.


In a bowl cream butter and sugar together with a whisk until fluffy.
Add vanilla essence and  eggs one at a time and beat well until the mixture is creamy.
Add almond flour and sifted flour,beat on lowest speed or fold in with a spatula till well mixed.


Divide the batter equally into 2 parts.
Add tiny drop of pink in one and yellow food colour in the other part and mix with spatula.


Pour the batter in the prepared baking tin.
Preheat the oven at 180 degree Celsius for 10 minutes.
Bake for 35 to 45 minutes or until toothpick/skewer inserted comes out clean.
Allow the cake to cool completely.
Trim the edges and top of the cake  cut the into half lengthwise
In a saucepan take jam and heat on lowest flame
Apply the jam with a brush on the sides and top of the cake so that the cake sticks well.
Place one side of the cake upside down to give chequered effect.
Roll out marzipan placing it between 2 parchment paper .
Cover the cake with the marzipan .


Trim off extra marzipan .
Keep the cake in the refrigerator for an hour.
Slice it to reveal the beautiful square /chequered pattern.
Serve and enjoy with cup of Tea/coffee or as it is.

ingredients
1/2 kg  chicken wings
1 tsp ginger garlic paste
2 tbsp cornflour
1 tsp pepper powder

1 1/2 tsp soy sauce
1 tbsp chilli sauce
 2  tbsp brown sugar
1 tbsp oil +for  shallow frying
4 to 5 cloves garlic minced
1 inch ginger minced
spring onion
Method 

  • Wash the chicken wings and drain excess water .
  • Apply salt ,ginger garlic paste pepper powder and lime juice and marinate well for 2 to 3 hours.
  • Add cornflour mix well .
  • Heat oil in a frying pan,once hot shallow fry until crisp and done.
  • remove the wings on a plate lined with absorbent paper.
  • In the same pan add minced garlic and ginger and saute for few minutes until light brown.
  • Now mix in the soy and the chilli sauce
  • And add the brown sugar ,mix well for few minutes until you get a sticky sauce.
  • Mix in the fried wings and let the sauce coat the wings well
  • Lastly add spring onion green and serve them right away.


notes
you can bake the wings if you prefer you may need to add baking powder in that case.
make sure the chicken wings are completely dry,after draining excess water you may pat dry them on an absorbent paper.
sauces can be adjusted according to your taste

Rava Ladoo/Pakatle Rava Ladoo are delicious soft ladoo made with rava/semolina/sooji ,coconut using sugar syrup .Rava Ladoo literally melt in mouth they are so soft and utterly delicious .Rava Coconut ladoos are super easy to make and very addictive they are ready within 30 minutes .Rava Ladoos can be made without coconut as well but trust me the combination of rava and coconut is just amazing .Fresh coconut taste best but you can use dessicated as well .

No feast/festival in India is complete without sweets Be it any religion there always has to be some sweet made for the festival .Burfi Peda Ladoos are commonly made by people of all religion .Besan Ladoo being my utmost favourite is made atleast twice a month you can check my recipe here  .  This recipe of  Rava Ladoo is the easiest and fail proof you can nail it in your very first attempt .Do give it a shot and you will love for sure .


Ingredients
2 cup fine rava/semolina /sooji
1 cup grated  fresh coconut( I used 3/4 cup fresh 1/4 cup dessicated )
1 /2 cup melted ghee *
3/4 cup sugar 1 1/2 cup water 
6 to 7 cardamom powdered
9 to 10 raisins
few almonds and pista chopped 




Method
Sieve rava and keep aside.
In a wide pan/nonstick /kadhai take ghee and add rava /semolina ,raost it over low flame for 12 to 15 minutes
Add coconut and roast for another 4 to 5 minutes .


Meanwhile prepare sugar syrup ,heat 11/2  cup water add 3/4 cup sugar cook over medium high flame for 5 to 7 minutes until you get 1 string consistency.


Add the sugar syrup to the roasted rava/semolina ,also add the powdered cardamom ,raisins pista and almonds and mix well.
Allow the mixture to cool completely .
Once cool shape into ladoos by pressing them on your palms ,you may add raisins to each ladoo .


Store in airtight container .
They stay well for  7 to 10 days

use pure or homemade ghee 
I have used very fine rava 
coconut can be skipped

Grilled Chicken Sizzler ..Simply delicious grilled chicken breast herbed rice,tossed vegetables served with a delicious easy to make brown sauce on a sizzling plate .This is my version of homemade grilled chicken sizzler which is insanely easy and utterly delish .
Making sizzler at home is always fun you can customize it according to your taste buds .I have lined up a couple of sizzler recipes which you can try at home .

ingredients
for the chicken marination 
500 gm chicken breast /boneless thigh
2 tsp lime juice
1 1/2 tsp pepper powder
1/2 tsp mixed herbs
2 tbsp olive oil
1/2 tsp chilli flakes
1/2 tsp oregano
5 to 6 garlic minced
1 tsp ginger garlic paste 
salt 

for the gravy /sauce
1 tbsp oil
1 tbsp butter
2 tbsp flour /apf/maida
7 to 8 garlic chopped fine
2 tsp soy sauce
1 1/2  tbsp chilli garlic  sauce 
1/2 tsp mixed herbs 

for tossed vegetables
8 to 10 mushrooms sliced
5 baby corns cut lengthwise
6 to 7 french beans
1 carrot  cut lengthwise
1/2 red bell pepper 
1/2 yellow bell pepper 
1 tsp pepper 
1 tsp lime juice
2 tsp olive oil
1/2 tsp chilli flakes 

for garlic rice
2 cups cooked basmati rice
8 to 10 garlic minced
1 tsp mixed herbs
3 spring onion green chopped fine
salt to taste 
2 tbsp olive oil
2 tbsp butter 

1 potato cut into wedges 
salt 
oil to fry .

  • Make some slits on the chicken breast apply salt and keep aside for 10 minutes 
  • Mix herbs ,garlic ,ginger garlic paste , chilli flakes ,pepper ,lime juice ,olive oil  and marinate the chicken with this mix.

  • Heat a grill pan add olive oil and butter then add the marinated chicken breast and cook till done .
  • Remove the chicken breast and keep aside.

tossed vegetables
  • In the same pan add olive oil and the vegetables , pepper ,chilli flakes salt herbs and mix.
  • Stir fry  the veggies on high flame.

herbed garlic rice
  • Take a wide pan/wok add olive oil and butter then add minced garlic and stir for few minutes over medium flame.
  • Add the spring onion greens ,pepper and herbs and mix.
  • Add the cooked basmati rice and mix well over high flame. 
  • Switch the flame off and set aside .

pepper garlic brown sauce
  • Heat a pan add olive oil and butter then add chopped  garlic 
  • Saute for few minutes .
  • Add in mixed herbs chilli flakes and soy and chilli  sauce .
  • Mix well .
  • Now add the flour and mix for few minutes 
  • then add water/stock and mix ,the sauce will thicken up
  • Add more water according to the gravy consistency desired .

Assembling the sizzler plate 
  • Heat the sizzler plate for 10 to 12 minutes 
  • Place it on the wooden base 
  • Drizzle few drops of oil and place few cabbage leaves
  • Arrange herbed rice ,tossed vegetables, fried potato and place the grilled  chicken breast.
  • Pour the brown sauce over the vegetables on the rice and little on the bottom serve it sizzling hot .

Forminhas are bite sized  hors d'oeuvre very commonly  served at  Catholic/Goan weddings and parties ..Forminhas are savoury canapes usually  filled with russian salad either with boiled chicken  cubes or boiled prawns / tuna mayo filling .They taste absolutely delish and are very addictive..I must say .

Forminhas are always a huge hit among kids and adults ..Forminhas make an absolute crowd pleaser and are always huge hit at parties .Making canapes at home is very easy you just need a shortcut pastry dough to make them I will share the recipe in my next tuna canapes/forminhas post .Canapes are easily available you can use the readymade ones for a quick and delicious treat .

Ingredients 

1 carrot 
1 big or 2 medium potatoes
1 apple
1/2 cup green peas shelled
1/2 cup pineapple chunks
3/4 to 1 cup mayonnaise ( i used homemade recipe here )
salt and pepper to taste

Method
Boil Potato carrot and green peas .
Cut potato into cubes and carrot into dices.
Cut the apple and pineapple into small cubes .
Mix the vegetables and apple ,pineapple with mayo 
Add salt and pepper according to taste.
You can refrigerate this filling and serve in Forminhas/Canapes when needed.
Do not fill the forminhas/Canapes in advance,it will turn soggy .
