Banana And Choco Chip Loaf Recipe /Banana Choco Chips Cake Recipe.

A soft and delicicous cake which goes well with a cup of coffee or tea ..Perfect for kids lunchbox too...I had some overripe bananas in my pantry and wanted to finish them off whenever i have them i either make banana fritters or a banana chocolate cake ..There were some choco chips sitting in the fridge since long so i aded them in the cake batter and had a wonderfully sot and yummy cake/loaf..
 Adding bananas to cakes always make it soft and gives a really nice taste..so do try this ..You will love it for sure

Ingredients
1 cup flour/maida
2-3 med sized bananas mashed 
2 eggs
1/4 cup buttermilk
1/4 cup brown sugar
1/4 cup powdered sugar
1/4 cup oil
1/4 cup butter/50 gms
1 tsp baking powder
1/2 cup choco chips
1/4-1/2 cup walnuts
1 tsp vanilla essence

Method
In a bowl beat together oil ,butter and sugar till creamy
Add  eggs and vanilla and beat till all mixed.
Now add buttermilk and mashed bananas and beat together till all combines well
Fold in flour and mix with a spatula.
Also add choco chips and walnuts dusted in flour.
Pour the batter in a greased loaf tin /cake pan lined with parchment .
Bake in a preheated oven for 35-40 minutes at 180 degree Celsius or till toothpick comes out clean.
Let it cool over wire rack .
Cut in slices and enjoy a soft banana choco chips cake/loaf.



Notes
I have added oil since i wanted the cake to be soft,you can always add butter alone
Add 1/2 tsp salt if using unsalted butter,i use salted hence skip salt
butter milk is  1/4 cup milk + 1/2tsp  vinegar /lime

Rich and delicious Mung Dal Halwa is very  popular sweet from North India mostly made during winters .as it keeps the body warm since it is made in pure desi ghee and nuts . Mung Dal Halwa easy to make..just few ingredients and this yummy halwa is ready though the stirring part is a tad bit more but the end result is worth it...Mung dal halwa taste best when eaten warm..Its rich loaded with ghee and nuts So definitely not for the faint hearted...
I have added Mawa/khoya to this delicious Mung dal halwa,you may skip ,It will still turn delicious..

how to make mung dal halwa with mawa

Ingredients
1 cup mung dal/split yellow gram
100 gms mawa/khoya
3/4 -1 cup ghee/dalda/clarified butter
1 to  1 1/4  cup sugar
1/2 tsp cardamom powder
nuts as needed
few saffron strands
4 cups milk

Method
Soak the mung dal for 5-6 hours .
Grind it to a coarse paste without adding any water.
Take a heavy bottomed pan /Non stick pan/Non stick kadhai and heat ghee/dalda
Once the ghee has melted add the mung dal paste and fry over low heat ,you have to fry it till it turns light golden brown it will take some time ,keep stirring continuously
Add Mava and sugar and continue to stir
Add milk and saffron/kesar ,cardamom powder  and cook for few more minutes until the halwa starts leaving ghee from sides and all milk had been soaked up.
Add chopped almonds and Cashews .
Serve warm



Notes
Though desi ghee gives this halwa a unique taste ,dalda will also work well,I have used dalda and ghee in equal amount means 1/2 cup ghee and 1/2 cup dalda
You can adjust the amount of sugar according to your taste
Adding mava/khoya is optional ,you amy skip.
This halwa stays well for a week or more keep it refrigerated in an airtight container  and heat the required amount when you feel like having



Chocolate Icecream Recipe/No Churn Chocolate Icecream Recipe

Creamy and delicious  Chocolate Icecream..Being a Chocolate lover this has to be one of my favourite icecream...I have already shared some icecream recipes in my blog and here is one more to the list..
Chocolate Icecream is also similar to my other icecream recipes except for few ingredients..Here I have used very little condensend milk since i was using Melted chocolate c..You may adjust the sugar according to your taste buds
This Chocolate Icecream is really yummy do try once I'm sure you will be trying it again...

Ingredients
1 cup whipping cream/double cream
1 cup fresh cream *
150 gms Chocolate compound
2 tbsp condensed milk
1 tbsp icing sugar
1 tbsp coco powder
2 tbsp milk

Method

  • Beat whipped cream with icing sugar till stiff peaks 
  • To the whipped cream add fresh cream and beat for few minutes.


  • Melt chocolate over a double boiler
  • Add cocoa ,milk to it and stir well
  • Add condensed milk and mix..
  • Add the melted chocolate mixture  to the cream and mix 



  • Beat till its all mixed 



  • Pour it in an air tight container and freeze for 6-7 hours
  • Enjoy creamy and delicious Homemade Chocolate Ice cream ..




Notes
Skip Fresh cream if you using double cream or a dairy whipped cream
I have used non dairy whipped cream hence used fresh cream too
I have used dark chocolate compound ,you may use milk compound too

A rich and delicious Mughlaimuttonbiryani...This MughlaiMuttonBiryani is  midly spiced the mutton is succulently cooked and the Rice is simply  flavourful and aromatic..
Unlike the other recipes from my blog this mutton is not marinated in curds before but boiled with few spices instead..then the stock is used to give a lovely flavour to the  mutton gravy and this is what makes this mutton mughlai biryani so yumm..Do try this rich yet easy to make mughlai mutton biryani..

Ingredients
Basmati rice 1/2 kg ( soaked for 30 minutes)
Mutton 1/2 kg
1 1/2  tbsp ginger garlic paste
1 tsp saunf/fennel seeds crushed
2 onion sliced and fried
1/2 cup yogurt/curds/dahi
10-12 almonds
1 1/2 tsp red chilli power
1 tsp garam masala powder
2 bay leaves
2 small tomatoes
10 --15 cashew
 1/4 cup oil
1 1/2 tbps ghee
2-3 green chillies slitted
1-2  tsp rose water
whole garam masala( 2 -3 cloves,1 inch cinnamon stick,3-4 green cardamom,2-3 cloves )
2 potatoes Cut in quaters and fried (optional)





Method

  • Boil mutton with salt,saunf/fennel seeds  and whole garam masala ...do not over cook the mutton
  • Fry sliced onions till crispy brown and keep aside
  • Grind almonds cashews and tomato to a puree
  • Boil rice with salt, cumin ,cardamom star anise and bay leaves till 3/4 th done
  • Drain the rice and keep aside
  • To the warm 2tbsp milk add saffron and keep aside
  • Heat a vessel add ginger garlic paste and fry till raw smell goes off
  • Now add only the boiled mutton,reserve the stock for later



  • Saute the mutton well for 4-5 minutes over medium flame
  • To this add the tomato cashew paste and fry well for sometime until it starts leaving oil from sides
  • Add the red chilli ,garam masala powder
  • Add  fried onions,curds and mix well then  add the mutton stock  and mint leaves and 1-2 green chillies slitted
  • Let it come to a boil ,switch the flame off



  • In the Vessel in which you are arranging the biryani add ghee let it melt
  • then spread a layer of rice
  • Sprinkle some fried onions
  • Then put the mutton masala layer and add fried potatoes if using.
  • Spread coriander and mint leaves over this
  • Now add the remaining rice
  • Top it with fried onions ,saffron infused milk
  • Make 4 holes with back of a spoon or a knife and pour 1/2 tsp ghee into each hole
  • Sprinkle some rose water on the top and cover the lid tighlty
  • Let it cook on dum for 20 minutes
  • Serve hot with any raita



Best Brownies Ever/Classic Brownies Recipe

These brownies are not only easy to make but they are the best  brownies ever ..Not too gooey ..not too fudgy just perfectbrownies...I'm never been a fan of brownies but made these and got hooked to .Found this recipe here.This is a no fail recipe with wonderful results I would highly recommend this brownie recipe .You can see how beautiful  it turned out from the pic itself, I simply loved its beautiful crust .
Ingredients
2/3 cup (*85 gms ) flour
1/2 cup cocoa powder( i used 1/4 cup + 1 tbsp )
1/2 tsp baking powder
1/2 cup (100 gms)butter
2 eggs
1 cup sugar
1 tsp vanilla essence
1/2 - 3/4 cup chocolate chips.
1 tsp vanilla essence
Method

  • Preheat oven at 180 degree C for 10 minutes
  • Melt the butter and allow it to cool to room temperature
  • Cover a  8 " square tin with aluminium foil/parchment and grease with oil all over.
  • Sift flour baking powder and cocoa together and keep aside
  • In a bowl beat eggs and sugar with a whisk ,add vanilla to this
  • Mix the sifted flour and cocoa powder
  • Add choco chips and mix



  • Pour the batter in the prepared pan
  • Bake for 30 minutes.
  • Let it cool completely
  • cut in squares and enjoy

Notes
I have used salted butter hence skipped the salt ,if using unsalted add 1/4 tsp salt
For cleaner squares ,allow the brownie to cool completely Then cut with a sharp knife 
You may add more chocolate chips if you prefer
If you wish you could add 1 tsp instant coffee powder along with the cocoa powder to the batter.
For fudgy brownies bake for less time about 20-22 minutes.

Easy Strawberry Icecream Recipe using Strawberry Crush

Its getting hotter and hotter each day and at this time we really feel like having some cool stuff.I usually skip lunch and have milkshakes instead that keeps me full till afternoon.
I have making a lot of icecream these days to enjoy after lunch or dinner .You can check the other icecreams posted in the blog.This is one easiest and creamiest strawberry  icecream ..We love homemade icecreams and i keep trying different flavours and have shared them here too.
My Dad loves strawberry icecream and asked me to make one . You'll must be wondering  strawberries in this summer ?yeah I stock strawberry preserve which makes it handy to make desserts with this and i can enjoy strawberry any time of the year.But this time i thought of making icecream with ready made strawberry crush that I had in my fridge
This eggless strawberry ice cream is really so delicious and creamy that you can make and enjoy an time of the year and you just need very few ingredients

Ingredients
1 cup  whipped cream (I  used Amul whipping cream )
150 gms  condensed milk
3- 4 tbsp strawberry crush/as needed
2 tbsp icing sugar


Method
Beat the whipping cream with the icing sugar till it hold stiff peaks
Add condensed milk ,strawberry crush and continue to beat

Mix all well with a spatula and pour it in an airtight container
Freeze for 6-8 hours
Enjoy creamy and delicious icecream with some crush ,chocolate wafers ,

Notes
I have used amulwhippedcream this time
Keep the beaters and bowl in the fridge before you start beating it
If you are using non dairy cream add 1 cup fresh cream to the whipped cream and beat again till its mixed
If you do not have strawberry crush ,you can add strawberry essence and some pink colour.
you may increase the amount of crush and condensed milk as per your taste.



Amrakhand Recipe /Mango Shrikhand Recipe

Amrakhand or Mango Shrikhand is a very popular dessert in Maharashtra its nothing but shrikhand made with mango pulp and hung curd .I have posted a kesarpistashrikhand before and here is another delicious shrikhand..which taste good with hot puris or on its  own .I have used fresh pulp from Alphonso mangoes ,you can use any variety of mango  pulp or even canned pulp if its not in season

Ingredients
500 gms curds
3-4 tbsp powdered sugar
1/2 cup mango pulp
1/2 tsp cardamom powder
1 -2 tbsp milk
nuts for garnishing

Method
  • Hung curd in muslin cloth for 5-6 hours.
  • In a bowl ,take hung curds,cardamom powder mango pulp and sugar

  • Mix it all together with a whisk or a hand blender till smooth
  • Add milk if required and blend it

  • Keep it in the fridge and serve chilled
  • You can serve it with poori bhaji or as a dessert
Notes
I have used powdered sugar you may use granulated too..You may increase/decrease the sugar amount as per your taste.
You can add saffron infused in milk if you wish.

Chicken Haleem Recipe

A healthy , very filling and delicious one pot meal...Haleem is a very tasty at the same time tedious preparation made with meat like lamb/mutton /beef or chicken ,there are lots of dal /lentils/pulses which is soaked then slowly cooked with meat and other spices.Its almost similar to hareesa/harees which i have posted in the blog but here there are more lentils used...Haleem is a pasty kind of texture unlike Khicda in which the meat is not mushy .You can read more about its origin here
.I have posted Mutton Khicda already  you can check that too..To quicken up the process I prefer using a pressure cooker to cook the dal and lentils but if you have ample time and patience you can surely cook these dals and lentils on a slow fire .
Haleem is a very popular dish from Hyderabad cuisine however this is  pakistaniversion of chicken haleem inspired by my dearest friend Tehmeena I thought of giving this recipe a try..Here i have taken the proportion of dal and pulses according to my choice you can add more or less pulses as per your liking.



Ingredients
 1/4 cup yellow mung dal split mung bean
 3 tbsp masoor dal/red lentil
2 tbsp  split green mung dal
 2 tbsp urad dal/split lentil
 1/4 cup chana dal
 3tbsp arhar/tuvar da/tur dal /pigeon pea
 1/2 cup daliya/broken wheat

1/2 kg chicken
3 onions sliced
2-3  green chillies chopped
1 tsp heaped red chilli powder
1 tbsp ginger garlic paste
 handfull mint leaves
handfull coriander leaves
1/4 cup curds
1 tsp garam msala pwder
1 1/2  tsp pepper powder
2-3 cloves
3 cinamon stick
bay leaves
1 tsp jeera/cumin

1 tbsp ginger julienes
2-3 chopped green chilli
1 cup fried onions
mint leaves
lemon wedges for garnish

Method

  • Soak the dals/lentils  for 6 hours or overnight.
  • Soak the daliya/broken wheat seperately for 3-4 hours



  • Boil all the dals/lentils  with salt and water together in a pressure cooker 
  • Lower the flame after two whistles and cook on medium flame for 25-30 minutes.
  • Cook the broken wheat/daliya in apressure cooker with salt and water for 15 minutes.
  • In a pan take 1 tbsp ghee or oil add ginger garlic paste all whole spices and chicken fry for some minutes




  • Add turmeric powder ,salt,coriander powder 1tbsp ,garam masala powder
  • Now add red chilli powder ,fried onions and curds and saute till oil seperates.
  • Add the boiled dals and broken wheat/daliya and fry or saute for few minutes



  • Add water salt and garam masala powder and cook.
  • With a hand blender,blend it till pasty .
  • Heat some ghee in  a pan to this add chopped green chillies ,ginger juliennes and fried onion saute for few minutes and pour it over the haleem 
  • Garnish with fried onions and serve with mint leaves and ginger julienne .



Notes
I have used chicken breast pieces ,you can use chicken with bones as well but make sure the bones are discarded before blending the dal and chicken
You can make this with mutton or beef too the cooking time will be little longer
I have used the finest variety of dalia/broken wheat hence it cooked faster but make sure you add enough water to cook and always cook it  on medium flame since it is very sticky it will tend to stick at the bottom of the pan/cooker.

Who doesn't love cakes ..Esp Chocolatecakes .i know there are few who don't but the rest love it ..Being a die hard chocoholic i simply Love chocolatecakes and always end up making one this time i tried the mirror glaze and it came out pretty well This is a super moistegglesschocolate cake which i sandwiched with whipped cream since there was some leftover and then covered with with dark chocolate ganache ..This cake was over in just 10 minutes I made this on the last day of a baking and cooking workshop that i recently conducted and my students loved it..

This moist eggless  chocolatecake is perfect for birthdays anniversaries or just when you crave for a decadentmoist chocolatecake.Its soft and so moist that it melts in the mouth .You don't need any sugar syrup to soak it..You can use ganache to sandwich it in between ,I generally do that but since i had some whipped cream left from m cupcakes i decided to use it in this .
Do try this ,I'm sure you will love it..

Ingredients
1 cup flour/maida
1 tsp baking powder
3 tbsp milk powder
3 tbsp cocoa powder
1/2 tsp baking soda
3/4 cup powdered sugar
1/4 cup  plus 2 tbsp oil
1 cup water
1 tsp vinegar
1/8 tsp salt


1/2 cup whipped cream

250 gms dark chocolate
200 ml fresh cream
Method

  • Preheat the oven at 160-170 degree for 10 minutes
  • line a 6 inch cake tin with butter papaer/parchment and grease it with oil
  • Sift together flour,cocoa ,milk powder baking powder and baking soda and salt 
  • In a bowl add sifted flour and powdered sugar mix with a hand whisk
  • To this add water and oil
  • Just before putting the cake in the oven add vinegar and mix well
  • Pour the batter in the prepared cake tin
  • Bake for 30-35 minutes or till toothpick comes out clean
  • Let the cake cool completely before you slice it...



  • For ganache ....Heat cream over lowest flame just till bubble appears on the edges
  • Remove from the flame and add chopped chocolate and let it sit for few minutes
  • Then mix with a spatula till all mixed well .
  •  Cut the cake into half
  • Add whipped cream and spread evenly
  • Place the other half of the cake .
  • Keep it in the refrigerator for 30 minutes atleast
  • Cover the cake completely with ganache
  • keep it in the fridge for 30 minutes
  • Take about 2 tbsp ganache and add 2 tsp milk and heat it ..
  • Now spread this ganache to give the cake a mirror glaze
  • Decorate the cake by piping some rossetes with ganache or decorate as you wish...


Cut and enjoy mouthmelting moist chocolate cake...

toppings
1 capsicum cut lengthwise
5-6 baby corn chopped
8-10 boiled mushrooms sliced
 1 onion sliced
 1 cup chicken tikka chunks
1 cup mozzarella cheese grated
1/2 cup Parmesan cheese grated
1/2 tsp oregano
1/2 tsp chilli flakes
1 tsp olive oil


Method

  • Make the dough and place the base on the baking tray ,bake for 8- 10 minutes and cool
  • Now spread the Pizza Sauce and add grated Parmesan and Mozzarella cheese 
  • Sprinkle oregano and chilli flakes
  • Add generous toppings,I used chicken tikka chunks ,onion,mushroom capsicum and baby corn 

  • Drizzle olive oil
  • Add some more cheese
  • Bake for 15-18 minutes till cheese melts and turns bubbly



Notes

I always bake the base first and later add toppings and bake till cheese melts,you can bake the base with the toppings it will take around 25 minutes for the pizza to get ready
You can add chicken tandoori chunks too or even boiled and shredded chicken.

ButterScotch Icecream Recipe/Eggless Butterscotch Icecream Recipe.

Butterscotch Icecream is  my family's favourite ...They love all the icecream made but this butterscotch is the utmost favourite.We enjoy the crunch of the praline in the creamy smooth icecream.
Just like the other Icecreams from My blog this too is easy,eggless made without Icecream Maker..
With just few ingredients this yummy Butterscotch icecream is ready..I have used cashews for the praline ,you may use almonds or hazelnut too.
easy homemade no churn butterscotch icecrecream

Ingredients
1 cup Whipped cream
150 gms Condensed milk
2 tbsp icing sugar
1/2 tsp vanilla essence
1/4 tsp butterscotch essence
few drops of yellow colour


For praline
50 gms cashews
1/2 cup sugar
1 tsp butter
oil to grease
butter paper

Method

  • In a pan heat sugar and cook on medium flame for 6-7 minutes till sugar melts,stir continuously.
  • Once it reaches amber colour ,switch the flame off.
  • Remove from Flame and add cashews and butter and mix



  • Spread the mixture on the parchment /butter paper and allow it to cool and harden
  • Using a rolling pin/mortar pestle or grinder ,coarsely powder the praline and keep aside.
  • In a bowl take whipped cream ,icing sugar and mix essence and yellow food colour
  • Beat till you get soft peaks 
  • Add condensed milk and cream * and beat for 2-3 minutes




  • Add praline and mix well with spatula
  • Pour it in air tight container and freeze for 6-7 hours until set.


Notes
*Add 1/2 cup Amul fresh cream if you are using non dairy whipped cream
If you dont find butterscotch essence ,skip it and use only vanilla 1 tsp 
I somehow dont like the flavour of butterscotch essence so added vanilla and butterscotch both ,you may only add 1 tsp vanilla or 1/2 tsp butterscotch alone.
You can make praline with almonds or hazelnut too.
You can even add butterscotch pearls .




Mango Chutney/East Indian Mango Chutney Recipe

MangoChutney/East Indian Mango Chutney is a sweet, tangy,mild spicy chutney made from semi ripe mangoes ..Its almost similar to the gujarati chundo but we add sliced almonds and also add ginger garlic juliennes to this...This is my favourite chutney love to relish it with every meal ..
It can be eaten with chapati too..
This year I made a huge batch of mango pickles and chutney but somehow forgot to post it here. Thought of posting it today as there are hardly any days left for the summers to get over but you can still make this chutney as you need semi ripe mangoes for this mango chutney ...
This Mango chutney is quick and easy to make and can be enjoyed soon after you make it .


Ingredients
1 kg mangoes semi ripe
1 kg sugar
12-15 garlic cloves
2 inch ginger
10 -15 almonds
2 -3 tbsp raisins
1 tsp kashmiri red chilli powder
2 tbsp vinegar
salt


Method 

  • Wash the mangoes,wipe it clean and dry and Peel the Mangoes ,discard the seed and grate them .
  • Slice the Almonds and keep aside
  • Cut the ginger and garlic into juliennes.
  • In a Pan take the grated mangoes and add about 1/2 cup water and place the pan over gas on medium flame.
  • Let it come to a nice boil .
  • Add the sugar and cook while stirring all the time.
  • You will see bubbles appearing 
  • Remove the scum with spoon and cook  till all the mixture thickens
  • Add chilli powder ,ginger garlic and the almonds and raisins and add salt
  • Cook for 2-3 minutes 
  • The consistency should be jam like.
  • Switch the flame off and mix in the vinegar .
  • Allow it to cool completely then fill it in sterilised glass bottles.

You can reduce the vinegar to 1 tbsp too...
Use Kashmiri Red chilli powder for a lovely red colour..
This chutney stays well for a year if stored well in a clean , dry, sterilised air tight bottle.

Veg Pulao Recipe/Quick and Easy Veg Pulao Pressure Cooker Method

VegPulao or Vegetablepulao is a delicious one pot meal and my personal favourite .VegPulao goes well with any veg or non veg gravies or even a simple veg kurma or dahi kadhi taste yumm wiht it..Usually served with raita and a roasted papadam in restaurants.
Veg pulao/Pilaf can be made  quickly in pressure cooker and can be best option for lunch boxes especially in those busy mornings if you keep your veggies chopped in the fridge a day ahead.
I prefer making this in a pressure cooker ,however it can be made in a pan too .

Ingredients
1 cup basmati rice (soaked for 20 minutes)
2 cups water
maggi cube/stock cube (optional)
1 cup veggies ( green peas,1 carrot ,3-4 french beans)
1 onion sliced (Crisp fried till golden brown )
5-6 cashews
7-8 raisins
2 bay leaves
1 inch cinamon stick
3 green cardamom
3 cloves
1 blade mace/javitri
2 star anise
1/2 tsp cumin seeds
 1 1/2 tbsp ghee/oil
salt


Method

  • Wash and soak the Rice for 20 minutes.
  • Boil 2 cups water and keep it ready.
  • In the cooker  add ghee/oil ,once hot add the whole spices
  • Saute for a minute
  • Add the Mixed vegetables and the soaked drained rice and saute for 2-3 minutes on medium flame
  • Add the hot water and salt and pressure cook for 2 whistles.
  • Let the steam escape ,open the lid and fluff the rice with a fork.
  • Serve with any veg/non gravy.
  • Garnish with fried onion and nuts



Notes 
I do not add  ginger garlic paste to my pulao .If you want you add 1 tsp ginger garlic paste after you add the whole spices and saute till the raw smell goes away.
Then add rice and water
You can add maggi cube or any stock cube to the water while its boiling it will enhance the taste,i usually add a veg stock cube 
You can use kolam or any variety of short grain rice as well.
Always use aged rice for pulao ,new rice tends to be sticky and will result in a mushy pulao.

Mince Cutlet/Kheema Cutlet is a delicious cutlet made from cooked mince potatoes and spices..These Mince Cutlet/Kheema Cutlet make a very mice starter /appetizer .These can be a great option for kids tiffin /lunch boxes.These Mince Cutlet have been my favourite since childhood .Mom used to make it every Sunday and i used to enjoy eating them with tomato ketchup .
So here's a very easy recipe for delicious Mince Cutlets/Kheema Cutlets which you can enjoy as your evening snack.

Ingredients
250 gms mince/kheema (beef ,mutton/chicken)
2 medium sized potatoes boiled
2 onions chopped
5-6 green chilies
1 inch ginger chopped
5-6 garlic cloves
1 tsp garam masala powder
1tsp pepper powder
1 tsp lime juice
1 egg
2 tbsp coriander leaves chopped
2 tbsp mint leaves chopped
bread crumbs to coat
oil to shallow fry

Method

  • In a pan heat oil,add ginger garlic and onion fry for 5-6 minutes till the onions turn soft .
  • Then add chopped tomato and chillies and fry till it turns soft.
  • Add  mince and saute for few minutes
  • Add garam masala,pepper powder,  salt and mix well.
  • Add coriander and mint leaves and lastly add lime juice.
  • Switch the gas off and take the mince mixture in a plate.
  • Let it cool a bit then add boiled mashed potatoes and and mix well 
  • Divide into small balls and shape it oval like a cutlet.
  • Dip the cultets in beaten egg and coat well with breadcrumbs.
  • Heat oil in a non stick pan.
  • Shallow fry till golden brown.
  • Serve hot with any ketchup as a starter or side dish

how to make mince meat cutlets

Notes
You can use mutton chicken or beef mince I have used beef mince .
adding tomato is optional,if you want skip it and increase lime juice.

GodaMasala is a very flavourful and aromatic blend of spices .Its used to prepare many dishes in Maharashtrian cuisine. From Usal to Chicken gravies this godamasala adds flavours and taste to every dish.
As i have mentioned earlier that i love sprouts usal this masala is always made and stored in the fridge .I make then in small batches since i want to keep the freshness and the flavours intact.
Godamasala is a blend of different spices and coconut which is roasted and then powdered.These need to be stored well in an airtight container .I prefer to store it in the fridge.
I will be posting many recipes using this masala in the coming weeks..
easy homemade goda masla recipe



Ingredients
1/4 cup dessicated coconut/khopra
1 1/2  tbsp cumin seeds/jeera
1/2 tsp shahi jeera/ caraway seeds
3 black cardamom
8-10 cloves
4-5 bay leaves/tej pata
2 tbsp  coriander seeds
1 tbsp dagadfool
4-5 dry kashmiri red chillies
7-8 pepper corns
2 inch Cinnamon
1 tbsp til/sesame seeds.

Method
Heat 1 tsp oil in a tava/non stick pan
Add cumin ,coriander seeds,black pepper ,caraway seeds,cloves and bay leaves.
Add cinnamon ,mace,dry red chillies ,sesame seeds coconut  dagad fool and roast till Nice aroma  is out .
Let it cool .
Grind it to a powder ,let cool and store in Dry airtight containers.

Original recipe calls for 1tsp  nagkeshar and 1/4 tsp hing/asafoetida..i did not add as i ran out of it.

Focaccia is very delicious bread very similar to pizza .Focaccia is either topped with herbs or olives and onions..Focaccia is very easy to make and can be flavoured with any vegetable,herbs cheese or anything you wish too.Here i have used herbs,olives ,capsicum and onion and it turned out to be so yumm that it vanished in no time..

Focaccia can be served as a snack or appetizer or even with your favourite pasta or pair it with soup.It is soft and airy .Do try it you will love and will be baking Focaccia more often.

Ingredients
2 1/2 cup flour
1 tsp yeast
 1 cup warm water
1 1/2 tsp sugar
1/2 tsp salt
1 tsp mixed herbs
1/2 tsp chilli flakes
1/4 cup olive oil

toppings
1 capsicum
7-8 olives
1 onion
1 tsp oregano
1/4 tsp rosemary



Method

  • In a bowl add yeast sugar and water ,cover and let it sit for 5 minutes.
  • The yeast will be frothy.
  • Take a big bowl,add  sifted flour salt,herbs ,chilli flakes to this add yeast and start to knead.
  • Add 2 tbsp olive oil and knead till you get soft,smooth dough
  • Keep the dough covered and allow it to rise .
  • Once doubled,punch down the air and knead the dough again for 2 minutes.
  • Take square pan ,line it with parchment and grease with oil,I have used  a rectangular pan.
  • Place the dough in the baking tin and cover  with a damp cloth /loosely with a cling wrap
  • Allow it to proof for 30-45 minutes till it doubles in size
  • Make dent/dimple in the dough carefully with your finger
  • Sprinkle herbs chilli flakes and the remaining toppings .
  • Drizzle 2 tbsp olive oil .
  • Bake in preheated oven for 22-25 minutes at 180 degree
  • Enjoy this delicious focaccia with soup/pasta or just as it is.

MasaleBhaat a delicious one pot rice preparation with veggies coconut and spices.Masalebhaat is one of the most popular dish in Maharashtrian cuisine.Its super yummy and very filling.I have shared another version of masale bhaat few years back in the blog .This version is quick and easy as i use my pressure cooker to make this.
Since i posted godamasala  i received many msgs and emails asking to share recipes using it..I have lined up recipes using goda masala in the coming weeks.
Masale bhaat is one of my favourite dish since childhood i have lovely memories attached with this dish.My dads friends wife used to send me a big tiffin filled with delicious masale bath .
I mostly prepare Masale bhaat on the days i don't eat non veg ..its not only delicious but a filling healthy one pot meal.


ingredients
1 cup basmati rice
1/2 cup green peas
1 potato
1/2 cup cauliflower florets
1 carrot
4-5 tendli/ivy gourd
2 small brinjal
cashews
1 1/2 tbsp godamasala recipe here
1 tsp chilli powder
1/4 tsp haldi/turmeric powder
2 bay leaves
2 tbsp oil
1/2 tsp mustard seeds
1/2 cup fresh grated coconut grated
8-10 cashews
salt


Method

  • Soak basmati rice for 20 minutes
  • cut all the veggies and keep in water.
  • Heat the vessel/pressure cooker add oil then add bay leaves
  • Add mustard seeds once the crackle add the veggies and saute over medium flame for 4 minutes
  • Add Goda masala ,chilli powder,turmeric powder ,drained rice and salt and saute for few minutes
  • Add 2 cups water ,check for salt ,add if needed
  • Cover the lid and pressure cook for 2 whistles.
  • Let the steam escape,open the lid.
  • Fluff with fork.
  • Add The grated coconut ,coriander leaves and cashews on top
  • Serve hot  with pickle papad/raita.



  • I have used pressure cooker to cook this ,you can cook in a vessel,you may just add 2 1/2 hot water
  • cooking in vessel lower the gas after it comes to a nice boil and the water almost disappears lower the flame and cook until done .
  • you can use any veggies you wish too these are basic veg that goes into it
  • you can use kolam/any short grain rice.




Palak Kofta /Spinach Meatballs Recipe

A healthy take on my fav meatballs...I love meatballs since childhood mom used to always make meatballs/ball curry once aweek ..this a healthy take on the same meatball  i have added palak/spinach puree to the meatballs/kofta which gives this koftas a lovely colour and also adds to the nutrients...
These palak kofta/meatballs are so yumm that they disappear  quickly..They make  a lovely snack and can be also seved as a starter in parties.
These palakkoftas/spinachmeatballs are crisp from out and soft melt in mouth inside



ingredients
250 gms mince
1 onion grated
5-6 garlic cloves
1 inch ginger
1/2 cup blanched spinach
 1/2 cup coriander leaves
 1-2tbsp pudina/mint leaves
3 -4 green chillies
4-5 pepper
1 tsp garam msala powder
1 egg
1 tsp gram flour
1 boiled potato
salt
oil to shallow fry

Method

  • Boil the potato,grate or mash it and keep aside.
  • Blanch a small bunch of palak /spinach and puree it
  • In a grinder /mixer add ,onion green chilli,ginger ,,mint garlic coriander leaves , black pepper , and grind
  • Then add mince ,garam masala powder and salt
  • And grind till all is combined
  • Now add  palak puree,egg ,boiled potato ,besan and  1 tsp lime juice/as needed and mix well.
  • Keep it in the fridge for 30 minutes
  • Heat oil in a  pan to shallow fry
  • Once oil is hot add kofta  and shallow fry till golden brown
  • You can even use Appe pan to fry
  • Serve hot as a starter with ketchup or any dip.



Creamy Chicken Filling

Creamy and delicious chicken filling..This creamychicken filling is very yummy and easy to make ...I use it for my breads/samosas or to stuff any other thing.it makes a great option for sandwiches and pasta too..
You can add any veggies i love adding sweet corn and carrot..you may add broccoli or any more veg .You can adjust the spice level if making for kids.

Ingredients
250 gms chicken breast
1 cup milk
1 tbsp butter
1 tbsp oil
1 1/2 tbsp flour/maida
1/2 cup water/stock
salt
1 tsp pepper powder
1 carrot chopped fine
1/2 cup sweet corns boiled
1 capsicum cut in dices
1 onion chopped
1 tsp oregano
1 tsp chilli flakes
1/2 tsp mixed herbs.
4-5 garlic minced

Method

  • Boil Chicken with salt and 1/2 tsp pepper powder you can add 1 tsp ginger garlic and 2 greeen chillies as well.
  • Boil and shred to pieces.
  • Heat a non stick pan add butter and oil ,then add onions and minced garlic and saute on low flame.
  • Saute till raw smell goes off .
  • Add carrot and capsicum and saute .
  • Add flour saute for a minute ,
  • Then add chicken pieces and boiled sweetcorn
  • Add milk and stock/water and mix well
  • Mix in pepper powder ,chilli flakes and herbs.
  • Let it cook over medium flame,add more milk/stock if the mixture looks very thick.
  • Let it cool,use it as a filling for sandwiches/buns/pattices etc..

stuffed bell peppers/capscicum with cheesy chicken

These cheesy chicken stuffed capsicum /bell peppers are just so delish t.These are baked you can even pan fry them. .these cheesy baked capsicum/ bell peppers make a perfect snack  and is sure to be a crowd pleaser ..I have been a fan of stuffed mince capsicum which my mom used to make when  I was a kid..
She still makes it ..its yumm too but this version is completely different she uses green capsicum the smaller ones fills it with yummy mince filling dips it in egg and fries the capsicum where as here i have baked it.

The filling too is different .here i have used creamychickenfilling  and it really tasted delish..you can check for the creamy chicken filling in My previous post

Ingredients
4-5 bell peppers/capsicum
1/2- 3/4 cup grated cheese
olive oil
chicken filling


Method
Slit capsicum/bell peppers into two either horizontally or vertically.
Remove the seeds.
With help of a spoon stuff the chicken filling
Add grated cheese on top.
Drizzle little olive oil after fillingn it.
Line a Baking Tray with parchment/butter paper
Pre heat the oven for 10 minutes at 180 degree Celsius.
Bake for 20-25 minutes
Serve hot with any bread /pasta
I enjoyed it with my  yummy Foccacia which is already in the blog.
